Cajun Inspired Blackened Salmon

This recipe is quick to make and very healthy.  Here we supplement the blackened salmon with fresh broccoli to make a rounded meal.  Expect diners to compliment the chef on this one and remark it's one of the best salmon preparations they've experienced.

 Serves 2-4 (depending on number and size of salmon filets)

Ingredients:

     2-4 1/4 to 1/2 lb salmon filets with skin removed.

     1 tbsp paprika

     1/2 tsp coarse ground black pepper

     1/2 tsp cayenne pepper

     1/2 tsp garlic powder

     1 tsp thyme

     3-4 chopped fresh basil leaves (or 1 tsp dried basil)

     1 tsp oregano

     1/4 tsp Kosher salt

     3 tablespoons canola oil

     1 lemon, cut into halves or quarters

     A quantity of broccoli suitable for the number of people to serve.

     A small loaf of bread to serve with the salmon filets.

Directions:

Mix the seasonings ( paprika, black pepper, cayenne pepper, garlic powder, thyme, basil, oregano and Kosher salt) together in a small bowl.  Spread this seasoning mixture on the bottom of a flat bowl and coat each salmon filet by dipping both sides into this mixture.

Heat the canola oil on medium high heat to shimmering and just starting to smoke in a large skillet (seasoned cast iron is preferrable).  Place the salmon filets in the hot oil and reduce the heat to medium for about two minutes, then turn them over and reduce the heat a little more.  Continue to cook the filets for another 4-6 minutes.  If the filets are extra thick, check them with a fork to see that they flake easily.  Now remove the filets to a serving plate.

Also, steam the broccoli while the salmon filets are cooking.  The broccoli will be served, along with the bread, as supplements to the salmon filets.
